1: Preheat oven to 400°F. 2: Scrub and wash potatoes. Pat dry and rub with oil, salt, and pepper. 3: Place potatoes on a baking sheet and cook for 70 minutes. 4: Cook bacon until crispy, then let cool on a paper towel. Finely chop and set aside. 5: Wash and chop green onions. 6: Grate cheese. 7: Remove potatoes from the oven and let cool for 5-10 minutes. Cut lengthwise. Scoop out the insides, leaving a thin layer of potato in the skin. 8: Rub potato skins with oil on both sides. Place in the oven for 10 minutes, flip, and bake for another 5 minutes. 9: Fill skins with cheese, bacon, and green onion. 10: Bake for an additional 5-10 minutes until the cheese has melted. 11: Serve with sour cream or Greek yogurt.
