A delicious honey garlic chicken stir fry filled with veggies and protein, perfect for a healthy dinner. Gluten and dairy-free, it makes for a great meal with amazing leftovers!

1: Cook rice as per package instructions. 2: Wash & dice veggies, mince garlic. 3: Pat dry chicken & dice into 1 inch cubes. 4: To a large skillet add avocado oil, add chicken, spread apart. Season with salt & pepper. Cook for 3 minutes per side. 5: Remove chicken & add another drizzle of oil, add red pepper and onions. 6: Cook for 4 minutes until soft. 7: Whisk together sauce ingredients: soy, minced garlic, honey, water & cornstarch. 8: Add cooked chicken & broccoli. 9: Add sauce & let everything simmer for 3 minutes. 10: Serve over rice & option to garnish with sesame seeds.
