A simple and quick veggie curry made with a good pre-made curry paste, coconut milk, and a splash of veggie broth. This comforting, meatless meal features an endless variety of vegetables and can be served with rice and homemade garlic naan.

1: Sauté onion, garlic & carrots in olive oil with a sprinkle of salt for 4 minutes. 2: Add pepper & cauliflower and cook for another minute. 3: Add curry paste and toss veggies. 4: Add coconut milk & broth. 5: Bring to a simmer, cover & cook for 10 minutes. 6: Stir in spinach & let cook for 2 more minutes. 7: Serve with rice & sprinkle with green onion and chili flakes.
