A delicious breakfast egg quesadilla made with a tortilla wrap, beaten eggs, diced peppers, jalapeño, cheese, and avocado. Perfect for using up leftover veggies and can include crumbled bacon as an optional topping. Exciting flipping technique makes it fun to prepare!

1: Heat oil in a skillet. 2: Add beaten eggs & cook until set, sprinkle with a little cheese & place tortilla on top. 3: Move the tortilla a little to check the egg isn’t sticking & then using a spatula flip it. 4: Add toppings to half & sprinkle with cheese. 5: Fold and press down, cook for another 2 minutes until bottom is crispy. 6: Remove & cut into 3.
