This simple and delicious veggie & salmon sheet pan dinner is a favorite weeknight meal that requires little effort. The dish features roasted sweet potatoes, Brussels sprouts, and broccoli paired with wild sockeye salmon, flavored with Cajun seasoning. It's a hands-off meal that's perfect for busy nights!

1: Preheat oven to 425°F. 2: Peel and cube sweet potatoes, toss with oil, salt, and pepper. Optionally sprinkle with paprika, garlic powder, or chili flakes. 3: Trim and cut Brussels sprouts in half, toss in oil with salt and pepper, and spread them on the baking sheet with sweet potatoes cut side down. 4: Bake for 25 minutes and broil for an additional 2 minutes. 5: Chop broccoli and toss in the same bowl with added oil, salt, and pepper. 6: Pat dry salmon, rub with olive oil, and sprinkle with Cajun seasoning. 7: Add salmon and broccoli to another baking sheet lined with parchment paper and bake for 14 minutes, adding to the oven when the potatoes are halfway done. 8: While dinner bakes, whisk together mayo and hot sauce. 9: Enjoy your meal!
