A delicious, nutritious shrimp veggie stir fry that's easy to make! Using frozen mixed vegetables and a simple homemade teriyaki sauce, this meal is not only quick but budget-friendly too. Perfect for family dinners, even toddlers will enjoy it!

1: Pat dry shrimp WELL using a paper towel & season both sides with salt and pepper. 2: Heat a skillet over medium heat, add 2 tbsp olive oil (or avocado oil). 3: Once hot add shrimp & cook 3 minutes per side. 4: Remove shrimp & place in a bowl. 5: Add another 1 tbsp of oil & add the rice, stirring for 60 seconds. 6: Add water or broth, stir, lower heat to low, cover & let cook for 8 minutes. 7: Remove the lid & add in frozen veggies. Put the lid back on and let cook for another 6 minutes. 8: Remove the lid, stir the veggies and rice. Add in shrimp & sauce. 9: Let everything simmer for 5 minutes. 10: Serve and enjoy!
