A family-friendly sheet pan dinner featuring roasted cauliflower seasoned simply with salt and pepper, and salmon fillets topped with a delectable Parmesan breadcrumb mixture. This easy-to-make meal is perfect for busy fall and winter nights, warming up your home while allowing you to multitask.

1: Preheat oven to 400°F. 2: Wash & chop cauliflower into small florets. 3: Place in a bowl, drizzle with oil and season generously with salt & pepper. 4: Toss until each piece is coated. 5: Spread on a baking sheet lined with parchment paper. 6: Bake for 20 minutes. 7: In a small bowl whisk together Parmesan cheese, breadcrumbs, garlic powder, sprinkle of salt & pepper. 8: Remove cauliflower from the oven, push aside & add your salmon pieces (pat them dry with paper towel). 9: Rub each salmon piece with mayo and then top with breadcrumb mixture. 10: Bake for 18 minutes & broil for 2 minutes. 11: Serve over rice and greens. For extra flavour use your favorite sauce/salad dressing over the rice.
