1: Preheat oven to 400°F. 2: Wash and trim/chop the vegetables. 3: Toss veggies in a bowl with 1 tbsp olive oil, salt, and pepper (optional: add chili flakes). 4: Spread veggies on a baking sheet lined with parchment paper and bake for 15 minutes. 5: Meanwhile, pat dry the salmon and rub it with olive oil and spice rub. 6: Remove veggies from the oven and increase heat to 450°F. 7: Add salmon to the baking sheet and bake for another 12 minutes. 8: Remove and drizzle salmon with maple syrup. 9: Broil on high for 4-5 minutes until salmon and veggies are crispy, being careful not to burn.
