A delicious and fresh kale slaw that can be prepared ahead of time and enjoyed throughout the week as a side dish, on sandwiches, or in salads. The slaw marinates beautifully in the fridge, making it perfect for BBQs and meal prep. The most important step is giving your kale a long massage to enhance flavor and texture.

1: Wash, trim, and chop kale. 2: Place kale in a large bowl and drizzle with 1 tbsp olive oil and 1 tsp sea salt. Massage with your hand for 5 minutes. 3: Thinly slice red cabbage and red onion. 4: Whisk together dressing ingredients: olive oil, Dijon, apple cider vinegar, and water. 5: Add cabbage and onion to kale and toss well with the dressing. 6: Serve with hemp hearts and optionally add other nuts and seeds for crunch.
