This spaghetti squash dish is a wonderful fall dinner featuring a hearty sausage and vegetable sauce topped with cheese. It's a delicious way to enjoy the squash season while combining a variety of vegetables and flavors.

1: Preheat oven to 400°F. 2: Slice open your squash lengthwise using a sharp knife. 3: Poke holes using a fork, scoop out seeds and rub with oil, season with salt & pepper. 4: Roast cut side down for 45 minutes. 5: Dice celery, zucchini, and spinach. 6: In a large skillet, add sausage (casings removed) and cook, crumbling until no longer pink. 7: Add zucchini and celery, cooking for another 5 minutes. 8: Add spinach and Parmesan, stir well and let simmer for another 5 minutes. 9: Remove squash from the oven and carefully flip it. 10: Stuff each half with sauce and top with shredded mozzarella. 11: Broil in the oven for 1-3 minutes until cheese has melted. 12: Serve with chili flakes and enjoy! 13: Save extra sauce and serve with pasta the next day.
