A lightened-up version of mashed potatoes, perfect for Canadian Thanksgiving. This recipe substitutes a portion of the potatoes with cauliflower, making it a healthier choice. It's dairy-free and can easily be adapted for a vegan diet, featuring garlic for added flavor.

1: Preheat oven to 425°F. 2: Cut off the top of the garlic bulb, place on a piece of tinfoil, drizzle with olive oil & close tight. 3: Roast garlic for 40 minutes. 4: Peel & roughly chop the potatoes; wash & trim the cauliflower. 5: Bring a large pot of water to a boil; add veggies & let boil for 30 mins. 6: Drain water, add vegan butter, mayo, salt, pepper & squeeze out roasted garlic from bulb. 7: Mash & mix until creamy smooth (option to use a hand mixer for ideal smoothness). 8: Sprinkle with parsley or chives and enjoy!
