A cozy plant-based chickpea stew that draws inspiration from the traditional Chana Masala. It's an easy weeknight meal with simple ingredients easily found in your pantry.

1: Dice onion, garlic, ginger & jalapeño. 2: Add a splash of oil to a large pot or Dutch oven. 3: Once hot, add onion with a sprinkle of salt, and cook stirring for 4 minutes. 4: Add garlic, ginger, jalapeño & spices, and cook another 2 minutes stirring. 5: Add chickpeas, crushed tomato & water, and let simmer for 25-30 minutes. 6: Serve with parsley and/or green onion. 7: Option to serve over rice or with naan.
