1: Cook rice (optional: toast in olive oil and then cook with broth). 2: Pat dry chicken and cut into cubes, toss with salt and pepper. 3: Slice veggies. 4: Whisk together sauce ingredients. 5: In a large skillet, heat avocado oil; once hot, add chicken (spread apart) and cook for 3 minutes per side. 6: Remove chicken from skillet, add a splash of oil, and sauté veggies. 7: Return chicken to skillet and add sauce. 8: Let everything simmer for 5 minutes. 9: Top with green onions and serve over rice or noodles.
