Cheesy Spinach and Artichoke Shells

A comforting dinner featuring large pasta shells stuffed with a flavorful mixture of spinach, artichokes, and cheeses. This dish can be prepared ahead of time and is perfect for family meals or special occasions like Mother's Day.

1: Add water to a large pot & bring to a boil. 2: Finely chop spinach & artichokes. 3: Add a splash of olive oil to a large skillet on medium heat, once warm add spinach and artichokes, Italian seasoning, salt & pepper. Cook for 5-8 minutes. 4: Remove spinach and artichokes from heat and let cool for a few minutes. 5: Add salt to the boiling water & pasta shells. Cook 1 minute less than package instructions. 6: Drain noodles & add them to a large lined baking sheet or baking dish. 7: Preheat oven to 350 (or skip if you’re making this ahead of time). 8: In a large bowl combine ricotta, egg, half of the Parmesan and half of the mozzarella cheese. 9: Fold in the spinach mixture & mix well. 10: Stuff each shell with mixture & top with marinara. 11: Add remaining parmesan and mozzarella cheese on top. 12: Bake at 350 for 20 minutes.
