1: Peel and cube half a butternut squash, toss with oil, salt, and pepper, and roast for 50 minutes at 400°F. 2: Remove sausage from casings and cook in a frying pan over medium-high heat until browned. Remove from pan and set aside. 3: Sauté onion and cherry tomatoes for 5 minutes until onions are soft. 4: Whisk together 6 eggs in a mixing bowl, add onion and tomato mix, cooked sausage, and butternut squash. 5: Fold in chopped kale and mix until combined. 6: Grease a 9x9 glass dish and pour in the mixture. 7: Cook uncovered for 35 minutes at 400°F.
