A comforting and quick one-pot meal featuring short noodle pasta, broccoli, and ricotta cheese. This dish is perfect for the whole family and is both healthy and satisfying.

1: Bring a large pot of water to a boil, add salt, and then add noodles. 2: When there are 2 minutes remaining, add broccoli and peas. 3: Reserve 1/2 cup pasta water. 4: Drain noodles and veggies, return back to the pot. 5: Add ricotta, parmesan, lemon juice, and pasta water. 6: Toss until nice and creamy. 7: Serve and season to taste. Option to drizzle with a little olive oil.
