Delicious smashed potato nachos made with leftover beef and a variety of vegetables. These comforting nachos are versatile and made with whole foods, perfect for sharing or enjoying as a meal. The beef is seasoned with taco spices, layered with crunchy vegetables, and topped with cheese, making them a satisfying dish any time of the year, especially with potatoes in season!

1: Preheat oven to 425°F. 2: Add potatoes to a medium pot, fill with water, bring to a boil & boil for 10 mins. 3: Drain and spread on a lined baking sheet with parchment paper. 4: Using the bottom of a glass, press down (smash) each potato until it’s very thin. 5: Rub with lots of olive oil & season with salt and pepper. 6: Bake for 25-30 minutes (check on them!). 7: Meanwhile cook your ground beef, once no longer pink add taco seasoning and 1/4 cup water, let it simmer for 10 mins. 8: Chop your onion, pepper, corn & avocado. 9: Remove potatoes from the oven, top with beef, veggies & cheese, place back in the oven for 5 mins. 10: Remove and top with avocado and salsa. 11: Serve and enjoy!
