Crispy Garlic Lemon Potatoes

These garlic lemon crispy potatoes are parboiled for juiciness and then baked to achieve the perfect crispiness. Best enjoyed fresh, but delicious as leftovers too!

1: Wash and cut potatoes in half (or in quarters if they are big). 2: Bring a large pot of water to a boil, add potatoes, and boil for 10 minutes. 3: Preheat oven to 425°F. 4: Drain potatoes and let cool for a few minutes. 5: Spread potatoes on a large baking sheet, drizzle with olive oil, and generously season with salt and pepper. 6: Bake for 25 minutes. 7: Remove from the oven and toss with minced garlic and a little extra oil. 8: Broil for 5 minutes until crispy. 9: Remove and place into a serving dish. Top with fresh lemon juice.
