1: Cut pork into cubes and trim any excess fat. 2: Season with salt & pepper. 3: Hit sauté and add a splash of oil. 4: In batches, sear pork on each side for 1 minute until brown, then remove and hit cancel. 5: Add orange juice, lime juice, beer & water; scrape the bottom to ensure nothing is stuck. 6: Return pork, garlic & spices to the pot; stir. If there isn’t enough liquid, add 1/4 cup water. 7: Close lid & pressure cook for 30 minutes, then naturally release for 15 minutes. 8: Remove pork and shred it using two forks. 9: Meanwhile, hit sauté and let the liquid simmer until reduced by half. 10: Return the shredded pork & toss with the liquid. 11: Spread pork on a baking sheet & broil for 4 minutes until the top is slightly crispy. 12: Assemble tacos.
