A delicious and easy summer pasta dish featuring a blend of fresh vegetables and creamy feta, all without turning on the oven. Perfect for those hot days, this recipe incorporates dry pasta, cherry tomatoes, and a mix of seasonings to create a flavorful, toddler-friendly meal.

1: Dice onion & zucchini (optional to peel). 2: Add oil to a large skillet; once hot, add onion & zucchini. 3: Sauté for 4 minutes, stirring until onions are soft. 4: Add cherry tomatoes, feta, and top with a little extra oil & all seasoning. 5: Cover and let simmer for 15-20 minutes, checking on tomatoes & stirring occasionally. 6: Meanwhile, bring a large pot of water to a boil, add salt & noodles. 7: Cook noodles 1 minute less than package instructions. 8: Scoop out 1/2 cup of boiling pasta water, then drain noodles. 9: Add veggies & feta to a blender along with 1/2 cup of pasta water; blend until smooth. 10: Mix noodles with creamy sauce, serve immediately with extra cracked black pepper & chili flakes.
