This beef goulash is a wholesome and super delicious beef stew, perfect for hosting. It's made by slow cooking diced onions and stewing beef with spices and broth, creating a flavorful and comforting meal. It pairs beautifully with creamy cauli/potato mash and crispy brussel sprouts.

1: Dice one onion and slow cook it with a pinch of salt in a large pot or dutch oven with olive oil until soft (~15 mins). 2: Add stewing beef (cut into smaller pieces), salt, and pepper, and cook until all sides are brown. 3: Add spices (1 tbsp paprika, 1 tsp garlic powder, 1 tsp cayenne) and cook for another minute. 4: Add enough broth (2-3 cups) to cover the meat and 2 bay leaves, then simmer for 15 mins. 5: Add 2 red bell peppers cut into 1 inch chunks, 1 can (14 oz) diced tomato, and 1-2 additional cups of broth; cover and simmer for another 20 mins. 6: Shred 1 large peeled potato right into the mixture and stir to help the stew thicken; continue simmering for another 15 mins. 7: Season as needed and remove bay leaves before serving.
