These crispy potatoes are made with baby potatoes, olive oil, and grated Parmesan. A simple yet flavorful dish that will have you falling in love with its crunch.

1: Preheat oven to 415°F. 2: Cut potatoes in half lengthwise. 3: Score each potato half (make 2 strips down & 3 across). 4: Line a baking sheet with parchment paper or use a baking dish and skip this step. 5: Add 1/4 cup olive oil & spread it. 6: Add Parmesan cheese and evenly spread. 7: Add potatoes cut side down & drizzle with remaining olive oil. 8: Bake for 40-45 minutes. 9: Remove from the oven, flip over, sprinkle with salt and enjoy the crunch!
