1: Preheat oven to 350°F. 2: Sauté the diced onion and chopped red peppers. 3: Add minced garlic and diced jalapeño (optional). 4: Stir in pulled chicken and beans if using. 5: Add taco seasoning and enchilada sauce; let simmer for 5 minutes. 6: Shred some sharp cheddar cheese. 7: Spoon the mixture into a small soft tortilla shell and sprinkle with cheese. 8: Roll the tortilla and place it into a greased casserole dish. 9: Repeat until all wraps are used or the dish is full. 10: Spread additional enchilada sauce and sprinkle with more cheese. 11: Bake for 20 minutes and then broil for 2 minutes. 12: Serve with avocados and cilantro.
