1: Preheat oven to 400°F. 2: Peel & dice sweet potatoes. 3: Toss sweet potatoes in a bowl with olive oil & taco seasoning. 4: Spread sweet potatoes on a large baking sheet and bake for 45 minutes. 5: Rinse and drain black beans. 6: Shred cheese & prep vegetables. 7: Add cooked sweet potatoes to a large bowl with black beans and mash. 8: Turn oven heat up to 415°F. 9: Heat each tortilla shell for 30 seconds per side on a greased skillet. 10: Add cheese, sweet potato filling, veggies, and more cheese to each shell. 11: Close shells and bake for 8-10 minutes.
