1: Sauté chicken or beef with onion and salt for about 7 mins until soft and cooked. 2: Add in peppers, beans, corn, chili powder, cumin, and garlic powder. Stir. 3: Add in water and mix through. Top with tomatoes and salsa, avoid stirring, and add rice on top. 4: Press the rice down into the sauce, avoiding stirring. Close lid and pressure cook for 20 mins. 5: Naturally release steam for 20 mins. Mix in cheese if using and let sit for another 5 mins with the lid on. 6: Top with avocado and jalapeño and enjoy!
