Delicious spicy corn fritters made with fresh local corn, red pepper, jalapeno, almond milk, and a blend of spices. These easy-to-make fritters are perfect as a snack or appetizer, and they offer a unique twist on enjoying corn.

1: Remove corn from the cob using a sharp knife. 2: Finely dice red pepper, jalapeno, and cilantro. 3: Combine veggies in a large bowl with almond milk and whisked eggs. 4: Combine flour and spices in another bowl. 5: Add dry to wet ingredients and mix until well incorporated. 6: Heat a large skillet and once hot add avocado oil (or vegetable oil). 7: Scoop batter using a ¼ cup and cook each fritter for 3 minutes per side. 8: Continue to do this in batches, using the oven to keep the cooked ones warm. 9: Option to serve with sour cream or Greek yogurt and a little drizzle of hot sauce.
