1: Boil potatoes in a large pot for 15 mins (start timer when water comes to a boil). 2: Drain & let cool. 3: Finely chop garlic & mix with olive oil. 4: Place potatoes on a baking sheet with parchment paper. 5: Preheat oven to 450°F. 6: Using the bottom of a glass, gently mash each potato. 7: Drizzle with olive oil & garlic mix. 8: Generously season with salt, pepper & chili flakes. 9: Bake for 25 mins + broil for 3 mins. 10: If adding cheese, remove & sprinkle potatoes with cheese, place back in oven & broil for 2-3 mins, watching carefully. 11: Enjoy with your favorite sauce, such as spicy mayo.
