Tofu Udon Noodle Stir Fry

A delicious and easy-to-cook Udon noodle stir fry with crispy air-fried tofu and an array of fresh vegetables, perfect for a Meatless Monday dinner. The dish comes together quickly thanks to prepped veggies and a flavorful sauce made with tamari, rice vinegar, and spices.

1: Press tofu by placing it on a plate between 2 pieces of paper towel; add a heavy pot or cast iron on top & let sit for 20 minutes. 2: Cut tofu into cubes, toss in a bowl with tamari, sesame oil, salt & pepper. 3: Air fry the tofu (spray with olive oil) for 15 minutes, shaking halfway through. 4: Whisk together sauce ingredients. 5: Add a splash of oil to a large frying pan & add veggies, cooking & stirring for 5 minutes. 6: Add noodles & top with sauce. 7: Cover with a lid and let the noodles 'relax' for 4 minutes. 8: Remove lid & stir everything until well incorporated; if noodles aren’t coming apart, add a splash of vegetable broth or more tamari & let cook for another couple of minutes. 9: Remove from heat & stir in tofu. 10: Sprinkle with green onion.
