1: Pat dry chicken & tenderize using a rolling pin or mallet until the chicken breasts are even. 2: Heat a large skillet with oil over medium heat. 3: Season both sides of chicken with salt, pepper & paprika. 4: Add chicken to the pan & cook undisturbed for 6 minutes. 5: Flip & cook for another 6 minutes. 6: Add barbecue sauce, put the lid on, lower heat & let simmer for 2 minutes. 7: Remove from the pan, dice into 1 inch cubes & return to pan to soak up additional sauce. 8: Store in a container in the fridge for up to 4 days.
