A delicious vegan broccoli soup that incorporates various veggies and is perfect for Fall/Winter. This soup is healthy, packed with vitamins, and can be easily made using an Instant Pot. The recipe includes sautéed onions, carrots, garlic, and cauliflower, combined with broth and almond milk for a creamy texture.

1: Chop 1 head of broccoli, 1/2 head of cauliflower, 2 carrots, 1 onion, and 2 garlic cloves. 2: Sauté onions with a sprinkle of salt in olive oil using the sauté function for 4 minutes. 3: Stir in carrots and garlic and cook for another 2 minutes. 4: Add the remainder of the veggies, 2 1/2 cups broth, 1 cup almond milk, and spices. 5: Pressure cook for 5 minutes. 6: Blend using an immersion blender and stir in 2 tablespoons of nutritional yeast or cheddar cheese. 7: For stove top, instead of pressure cooking, simmer for about 25 minutes.
