A delicious and easy vegetarian option for quesadillas featuring roasted sweet potatoes, black beans, and cheese, spiced up with taco seasoning and served with salsa or guacamole.

1: Preheat oven to 400°F. 2: Peel & dice sweet potatoes. 3: Toss in a bowl with a generous drizzle of olive oil & taco seasoning. 4: Spread on a lined baking sheet and bake for 45 mins. 5: Rinse and drain black beans. 6: Shred cheese & prep veggies. 7: Add cooked sweet potato to a large bowl with beans and mash. 8: Turn up oven heat to 415°F. 9: Heat tortilla shells for 30 seconds so they are malleable. 10: Add cheese, sweet potato filling, veggies, and more cheese to each shell. 11: Close & bake for 10 mins.
