1: Preheat oven to 400°F. 2: Dice bread and toss with olive oil, sprinkle with salt. 3: Bake bread for 12 minutes, shaking the pan halfway through. 4: Bring a pot of water to a boil. 5: Add eggs and boil for 8 minutes. 6: Remove eggs and place them into an ice bath. 7: Chop mini cucumbers, cherry tomatoes, jalapeño, and avocado. 8: Assemble bowls with croutons, chopped veggies, and boiled eggs. 9: Drizzle with olive oil and red wine vinegar. 10: Season with everything but the bagel seasoning.
