A delicious and simple vegetarian dinner featuring roasted red peppers blended into a creamy pasta sauce. This flavorful dish is enhanced with sautéed onion, garlic, and seasoned with Italian herbs, making it a perfect choice for a quick weeknight meal.

1: Cut peppers in half lengthwise & scoop out seeds. 2: Place on a baking sheet lined with aluminum paper. 3: Broil on high for 10 minutes. 4: Remove from the oven & cover with aluminum paper to allow the peppers to steam for 25 minutes. 5: Meanwhile, dice the onion & garlic. 6: Sauté with olive oil & Italian seasoning for 5 minutes until soft. 7: Open the aluminum foil & remove the skins from the peppers. 8: Add peppers, onion, garlic to a blender, add almond milk & blend until smooth. 9: Pour back into a skillet & stir in hummus. 10: Cook pasta according to package directions, drain & add to the sauce. 11: Serve as is or top with feta, parsley, and chili flakes.
