1: Chop 3-4 medium size potatoes and pan fry in olive oil for 10 minutes. 2: Add 1/2 a diced onion and spices (1 tablespoon paprika, 1 teaspoon garlic powder, 1 teaspoon chili flakes, salt, and pepper) and continue cooking for another 10 minutes. 3: Make 4 wells in the mixture, crack 4 eggs into the wells, and cover. 4: Cook until the egg whites have set and the yolks reach your desired consistency (6-10 minutes). 5: Serve with an avocado and ketchup or salsa.
