1: Sauté 1 small chopped onion in a large skillet with olive oil for 4 minutes. 2: Add 2 minced garlic cloves, spices (1 tsp cumin, chili powder, paprika, and 1 tbsp tajin seasoning) and 1 cup uncooked rice; stir and cook for 2 more minutes. 3: Add a 28 oz can of diced tomatoes and 1/2 cup vegetable broth, then bring to a boil. 4: Simmer for 10 minutes, stirring a few times. 5: Add another 1/2 cup broth and continue simmering until liquid is absorbed and rice is cooked. 6: Top with cilantro and enjoy.
