Veggie Pancetta BOURSIN Pasta

A deliciously creamy and versatile pasta dish featuring Boursin cheese and a mix of fresh veggies. Perfect for Mother's Day, it includes cherry tomatoes, red bell pepper, broccoli, garlic, and your choice of bacon or pancetta for a salty kick. Topped with the silky cheese, it's sure to be a hit!

1: Preheat oven to 350°F. 2: Wash & chop broccoli into small florets and pepper into 1 inch pieces. 3: In a large baking dish add Boursin cheese, tomatoes, peppers, broccoli & garlic. 4: Drizzle with olive oil & season with salt, pepper and chili flakes (optional). 5: Bake for 30 minutes. 6: Meanwhile add bacon or pancetta to a skillet & cook for 8 minutes stirring often until crispy. Remove from heat & let the extra grease drain on a paper towel. 7: Bring a pot of water to a boil & cook noodles (1 minute less than package instructions). 8: Reserve 1/2 cup of pasta water & drain noodles. 9: Remove veggies & cheese from the oven, stir everything until cheese is creamy. 10: Add noodles, bacon & extra pasta water, stir again until all noodles are coated. 11: Enjoy immediately!
