This Italian chopped pasta salad is an incredibly delicious make-ahead dish perfect for summer gatherings, Mother's Day, and Memorial Day celebrations. Easy to prepare and suitable for meal prep, this pasta salad serves 6 and brings together short pasta noodles, chickpeas, salami, bocconchini, olives, pepperoncini, fresh basil, and a tangy dressing made with olive oil, balsamic vinegar, honey, Dijon, garlic, Parmesan, and optional mayo.

1: Bring a large pot of water to a boil, add salt & cook noodles. 2: Dice salami, olives & pepperoncini. 3: Whisk together salad dressing ingredients. 4: Drain noodles & add to a large bowl. 5: Add a little of the dressing & toss, letting the noodles cool. 6: Add remainder of ingredients & dressing to bowl, toss well & enjoy. 7: Store in the fridge for up to 4 days.
