1: Dice the veggies and whisk together the eggs. 2: Pat dry the shrimp, dice into small pieces and toss with salt, pepper & chili flakes. 3: Heat a large skillet with olive oil, add carrot & onion, and cook for 5 minutes stirring. 4: Push the veggies to the side and add the shrimp, cooking for another 3 minutes while stirring a couple of times. 5: Add the rice, peas & corn, and stir to combine. 6: Push the mixture to the side and add the whisked eggs, scramble and combine with the rice mixture. 7: Add soy sauce & sesame oil, and combine well. 8: Top with green onions before serving.
