This amazing spiced lentil soup is a delicious winter staple made without any dairy. It's a great plant-based, nutritious meal that can elevate your lunch with creamy flavors. Adapted from @ohsheglows, it serves about 6 people.

1: Add vegan butter to a large pot or Dutch oven and melt it. 2: Add onion and cook for 4 minutes. 3: Add spices (curry powder, cumin, cinnamon, salt, pepper, and chili flakes) and let cook for another minute. 4: Add diced carrots and continue cooking until they are soft, about 3 minutes. 5: Add red lentils, diced tomatoes with juices, coconut milk, and vegetable broth. 6: Let simmer for 20 minutes covered. 7: Stir in chopped spinach and cook until wilted.
