A tasty and simple roasted carrot ginger soup that's perfect for using up carrots. This healthy weeknight dinner pairs well with garlic bread or grilled cheese.

1: Preheat oven to 400°F. 2: Peel & roughly chop carrots. 3: Cut the top off a garlic bulb. 4: Add carrots & garlic to a lined baking sheet. 5: Roast for 45 minutes, flipping the carrots halfway through. 6: Dice onions & ginger. 7: Meanwhile, heat a large pot with oil over medium heat, add onions and cook for 5 minutes. 8: Add ginger and cook for 1 more minute. 9: Add broth and simmer for 10 minutes. 10: Add everything to a high-speed blender & squeeze out the garlic from the bulb, blend until smooth. 11: Return to pot & add coconut milk, stir well. 12: Serve with garlic bread or grilled cheese.
