It features roasted Roma tomatoes, onion, and garlic, blended to a smooth consistency, and topped with cream or cheese for added richness. 1: Preheat oven to 400°F. 2: Slice tomatoes lengthwise and quarter onion. 3: Spread on a large baking sheet (cut side down). 4: Cut the top off the garlic bulb and place on a small piece of aluminum foil. Drizzle with olive oil and cover. 5: Drizzle tomato/onion with olive oil and spices, toss well. 6: Bake for 50 minutes. 7: Add everything to a high-speed blender and squeeze out garlic carefully. 8: Add broth and blend until smooth, optionally add in cream. 9: Pour into a pot and let simmer for 10 minutes. 10: Assemble grilled cheese sandwiches. 11: Optionally add a sprinkle of Parmesan cheese when serving the soup.
